Butterscotch and White Chocolate Chip Nut Cookies

Butterscotch and White Chocolate Chip Nut Cookies
(makes about 24 cookies)
75ml/ 1/3 cup melted and cooled unsalted butter
15ml/1 tbsp honey
125ml/ ½ cup brown sugar
50ml/ ¼ cup sugar
2ml/ ½ tsp vanilla
1 large egg white
1ml/ ¼ tsp cinnamon
1ml/ ¼ tsp baking soda
300ml/1 ¼ cups all-purpose flour
175ml/ ¾ cup butterscotch chips
175ml/ ¾ cup white chocolate chips
50ml/ ¼ cup chopped nuts

In a large bowl combine honey, brown sugar, and sugar to the melted butter and mix well. Then beat in the vanilla and egg white.

In a medium bowl shift/whisk cinnamon, salt, baking soda, and flour. Then add to butter mixture. Add the chips and nuts.

Drop batter by 5ml/1 tsp about 5cm/2 inches apart.

Bake in a 190°C /375°F preheated oven for 8-10 minutes.
